Beerakaya chutney is a traditional Andhra dish which is a combination of the earthy flavours of ridge gourd with a tangy taste of tamarind and aromatic spices. It is a healthy and flavourful side dish that pairs perfectly with steamed rice.
1 peeled and chopped beerakaya 1 tbsp oil 2 tbsp chana dal 1 tbsp urad dal 2-3 dried red chillies 1 tsp - cumin seeds 1 tsp - mustard seeds 5-6 - curry leaves 1 chopped onion 1 small piece tamarind Salt to taste
Heat oil in a pan, add chana dal, urad dal, dried red chillies, cumin seeds and roast until golden.
Add chopped beerakaya, onion and sauté until softened.
Allow the mixture to cool and blend with tamarind, salt, and add water to a coarse paste.
Heat oil, add mustard seeds, curry leaves, let them splutter, then pour the tempering over the chutney.
Your chutney is ready to serve with the meals.
