Anda Bhurji, the Indian version of scrambled eggs, is a high-protein dish that can be whipped up in under ten minutes. With the addition of chopped veggies and spices, you can make it for a healthy meal.
2-3 eggs 1 onion 1 green chilli 1/2 inch ginger 1/2 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1/2 teaspoon garam masala 1 tablespoon oil Salt to taste Coriander leaves for garnish
Whisk the eggs. Chop onion, green chilli and ginger.
Heat some oil and saute onions. Add green chillies and ginger.
Mix turmeric powder, red chilli powder, and garam masala. Stir till aromatic.
Pour the whisked eggs and stir. Cook till they are scrambled and cooked thoroughly.
Garnish with chopped coriander leaves and serve with roti.
