The smell of mangoes filling your kitchen as the cake bakes and the satisfaction of tasting the first bite sounds amazing, right? This means it's time for you to make the most of it with a homemade mango cake.
2 cups all-purpose flour 2 tsp baking powder 0.5 tsp baking soda Salt, as per taste 1 cup unsalted butter 1 cup fresh mango puree 4 eggs 2 tsp vanilla extract
Preheat the oven to 175 degrees and keep it ready. Sift the all-purpose flour, baking powder, baking soda, and salt into a basin. Repeat twice.
In a separate dish, whip the butter for half a minute until it's pale and fluffy. Grease and line an 8"x4" loaf pan with baking parchment.
Add the eggs one at a time and beat thoroughly for approximately half a minute between each addition.
Combine the mango puree and beat in. Add mango or vanilla extract and mix it.
Add the sifted flour in three parts, folding gently as you go. Be careful not to over-mix.
Pour the mixture into the prepared baking sheet and bake for 32-35 minutes, or until a spear inserted comes out clean.
Place the pan on a cooling rack for about 12-15 minutes before unmoulding. Enjoy!
