Buttery and mildly nuttyâthe suji halwa is the quintessential sweet treat that is intrinsic to special occasions and celebrations across India. When guests decide to make an appearance unannounced during their outings in this period, this simple but quick recipe is sure to be welcomed on its own or paired with hot puris.
½ cup suji ¾ cup sugar ¼ cup ghee 1 cup water ½ teaspoon cardamom powder 6-7 almonds, chopped 6-7 raisins, fried in ghee 3-4 saffron strands, for garnish
Melt the ghee in a pan before adding in the semolina and toasting it until lightly browned with a nutty aroma.
Pour in the water and stir constantly to avoid any lump formation, before tipping in the sugar and cooking further.
Once the water begins to be absorbed and the halwa detaches from the side of the saucepan, add the chopped almonds and fried raisins.
Sprinkle the cardamom powder and mix well to combine before turning off the stove and garnishing with saffron. Serve hot.
