The lacy rice crepe which is made using two key ingredientsâthe neer dosa is essentially a gluten-free preparation belonging to Udupi cuisine. Best enjoyed when paired with a savoury coconut chutney or flavoursome seafood curry, these dosas are the perfectly versatile pairing for breakfast or a meal.
1 cup old rice 1.5-1.¾ cups water, as required ½ teaspoon salt Oil, for greasing
Wash the rice thoroughly and soak the grains for 5-6 hours or overnight.
Drain the excessive water and transfer it to a blender along with most of the water needed to grind it into a runny batter.
Season with salt while brining a dosa pan to heat.
Brush it lightly with some oil before ladling the batter in a single layer across the surface.
Cook for a minute over medium heat before flipping it and cooking for a few more seconds.
Repeat the process as required and serve the dosas warm with a side dish of choice.
