An Easy Neer Dosa Recipe For A Gluten-Free Breakfast Option

The lacy rice crepe which is made using two key ingredients—the neer dosa is essentially a gluten-free preparation belonging to Udupi cuisine. Best enjoyed when paired with a savoury coconut chutney or flavoursome seafood curry, these dosas are the perfectly versatile pairing for breakfast or a meal.

INGREDIENTS

1 cup old rice 1.5-1.¾ cups water, as required ½ teaspoon salt Oil, for greasing

STEP 1

Wash the rice thoroughly and soak the grains for 5-6 hours or overnight.

STEP 2

Drain the excessive water and transfer it to a blender along with most of the water needed to grind it into a runny batter.

STEP 3

Season with salt while brining a dosa pan to heat.

STEP 4

Brush it lightly with some oil before ladling the batter in a single layer across the surface.

STEP 5

Cook for a minute over medium heat before flipping it and cooking for a few more seconds.

STEP 6

Repeat the process as required and serve the dosas warm with a side dish of choice.
