When made well, the Chinese-style fried rice can be a complete meal replete with assorted vegetables, protein and carbohydrates. Recreate this restaurant-style fried rice at home to pair with steamed or stir fried vegetables, chicken or tofu.
1 cup cooked rice 2 eggs ½ cup shredded chicken ¼ cup carrots, chopped ½ cup broccoli florets, steamed 3 spring onions, chopped 4-5 cloves garlic, minced 1-inch piece ginger, minced 1 tablespoon soy sauce ½ tablespoon vinegar 1 teaspoon red chilli flakes 1 teaspoon chilli oil 1 tablespoon vegetable oil Salt, to taste White pepper, to taste
Heat the oil in a pan and cook the ginger-garlic with the spring onions until aromatic.
Toss in the chopped carrots and steamed broccoli to sauté for 2-3 minutes before adding in the soy sauce, vinegar and chilli flakes.
Mix well to combine before pushing the mixture to the side and scrambling the eggs using a few drops of oil.
Once cooked, mix the eggs with the vegetables, tip in the shredded chicken and season with some salt and white pepper.
Add the cooked rice and continue to toss thoroughly to combine the ingredients before garnishing with a generous drizzle of chilli oil and serving warm.
