Whether one opts to enjoy this as a snack or as a prelude to an elaborate meal, the bruschetta is an Italian appetiser typically made using marinated tomatoes over toasted baguette. Over the course of its evolution, ingredients such as avocado, prosciutto, cheese and even chickpeas have replaced or been added to the classic set of ingredients.
4 slices baguette 2 medium-sized tomatoes, chopped 2 cloves garlic, minced 6-7 basil leaves 1 tablespoon olive oil 4 slices prosciutto (optional) ½ avocado, mashed 4 slices brie cheese Salt and pepper, to taste
Toast the baguette slices until lightly browned while combining the chopped tomatoes with garlic, salt and pepper, in a separate bowl.
Add the cheese over the toasted bread, followed by the mashed avocado and then the tomato mixture.
Roughly chop the basil leaves to garnish over the prosciutto before drizzling the olive oil generously before serving.
