Amla kanji is a traditional North Indian fermented drink made during winter. It has a sharp, tangy taste and develops its flavour naturally over a few days through fermentation. The process encourages beneficial bacteria, making it gentle on digestion when consumed in small quantities.
6–8 fresh amlas, grated or finely chopped 2 tbsp mustard powder ½ tsp red chilli powder Salt to taste 4 cups drinking water
Combine amla, mustard powder, chilli powder and salt in a clean glass jar.
Add water and stir well to combine.
Cover loosely and place in sunlight for 3–4 days, stirring once daily.
Strain and refrigerate once tangy, then serve in small glasses.
