Amla candy offers a balanced sweet-tangy flavour that feels light, refreshing and considered to be a great digestif. It has a soft, chewy texture and natural sharpness which fades into a pleasant warmth, creating a winter special delicacy that is best consumed after a meal.
250 g amla 150 g sugar 1 teaspoon salt ½ teaspoon black pepper ½ teaspoon cumin powder Water, for boiling
Deseed and boil the amla until soft before draining and separating the segments.
Mix the warm pieces with sugar in a bowl and cover it.
Let it rest for a full day so the sugar is fully absorbed by the fruit.
Strain the syrup, and spread the pieces on a tray.
Dry them in sunlight or under a fan until they turn firm.
Dust the dried pieces lightly with salt, black pepper and cumin powder before storing them in an airtight container.
