Amla achar is a sharp, flavourful Indian pickle made with fresh gooseberries that are naturally rich in vitamin C and iron. It has long been prepared in Indian kitchens as a way to preserve amla while supporting immunity through seasonal changes. The bitterness of the fruit softens as it cooks slowly in oil and spices. This pickle pairs especially well with simple meals like dal, curd rice or khichdi.
500 g fresh amla ¼ cup mustard oil 1 tsp mustard seeds 1 tsp fennel seeds ½ tsp turmeric ½ tsp red chilli powder Salt to taste
Steam or boil the amla until just tender, then deseed and chop into pieces.
Heat mustard oil until hot, add mustard and fennel seeds and let them crackle.
Add the amla along with turmeric, chilli powder and salt, cooking until moisture reduces.
Cool completely before storing in a clean, dry jar.
