Ambali is a light, earthy ragi drink that cools the body and feels easy on the stomach. Slightly tangy from fermentation, it’s a simple, traditional way to stay refreshed in hot weather.
2 tbsp ragi flour 1½ cups water ½ cup buttermilk Salt to taste 1 tbsp chopped onions (optional) 1 tbsp chopped coriander
Mix ragi flour with a little water first, then add the remaining water to make a lump-free mixture.
Cook the mixture on low heat while stirring continuously until it thickens smoothly.
Allow the cooked mixture to cool down completely at room temperature.
Add buttermilk and whisk well to achieve a light, drinkable consistency.
Mix in salt, onions, and coriander, then serve slightly chilled or at room temperature.
