Aloo pyaaz kulcha is a soft, tawa or tandoor-cooked flatbread which is loaded with spicy potato and onion stuffing. This North Indian favourite tastes amazing when paired with chole, raita, or pickle, turning every bite comforting and extremely satisfying.

Ingredients

For Dough: 2 cups maida ½ cup curd ¼ cup (approx.) warm milk ½ tsp baking powder ¼ tsp baking soda 1 tsp sugar ½ tsp salt 1 tbsp oil or ghee

Ingredients

For Stuffing: 3 medium, mashed boiled potatoes 1 medium, finely chopped onion 1–2, finely chopped green chilli 2 tbsp, chopped fresh coriander ½ tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala ½ tsp dry mango powder (amchur) Salt to taste

Step 1

In a bowl, mix maida, baking powder, baking soda, sugar, salt, curd, oil, and warm milk. Knead a soft dough out of it. Cover and let it rest for about an hour.

Step 2

Mix mashed potatoes, chopped onion, green chilli, coriander, spices, and salt to make a flavourful stuffing.

Step 3

Divide the prepared dough into equal medium balls. Take one dough ball and cover the rest to prevent dryness.

Step 4

Flatten the dough ball and place the stuffing in the middle, and seal the edges. Gently roll the balls into a thick oval or round shape and sprinkle kalonji and coriander from the top.

Step 5

Heat the tawa, place the kulcha and cook from both sides until it turns golden and the bread puffs a bit.

Step 6

Brush the hot kulchas generously with ghee or butter and serve with chole, raita, sliced onions, and pickle for a complete meal.
