On the days when you are in no mood to cook, aloo pulav is the perfect option. Made with assorted vegetables, your go-to spices, and rice, you can whip yourself aloo pulav in no time.
1 cup basmati rice 1 potato 1 onion 1 tomato 1 tbsp ginger-garlic paste 2 green chillies 1/2 tsp cumin seeds 2-3 cloves 2-3 cardamom pods 1 bay leaf 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/2 tsp garam masala Salt to taste 2 tbsp oil 2 cups water Coriander leaves for garnish
Heat some oil in a pressure cooker and add cumin seeds and other whole spices.
Sauté sliced onion, ginger-garlic paste, and green chillies. Add tomatoes and cook till soft.
Stir in chopped potatoes, turmeric, red chilli powder, and salt. Cook for 2-3 minutes.
Rinse, soak, drain rice, and mix in. Add water and garam masala and stir well.
Pressure cook for 1-2 whistles, garnish with coriander leaves, and serve.
