Aloo palak brings together boiled potatoes and fresh spinach to create a nourishing dish that is naturally rich in iron. It is wholesome without feeling heavy and pairs well with rotis, parathas or simple steamed rice.
2 boiled potatoes (cubed) 2 cups spinach 1 onion (chopped) 1 tomato (chopped) 1 tsp ginger-garlic paste ½ tsp cumin seeds ½ tsp turmeric, ½ tsp garam masala Salt and oil
Blanch the spinach for a minute, cool and blend it into a smooth puree.
Heat oil, add cumin seeds, onions and ginger-garlic paste and sauté until fragrant.
Add tomatoes, turmeric, garam masala and cook until the mixture turns soft and thick.
Stir in the spinach puree and potatoes, simmer briefly and adjust salt before serving.
