An all-purpose coconut curry is what you need to craft delicious dinners and lunches. You can cook veggies and meat in it and later, serve it with rice or flatbreads. This recipe is a must-go in your cooking journal. Check out.
1 tbsp coconut oil 1 small onion 4 cloves garlic 1 tbsp grated ginger, coriander 1/2 cup broccoli, carrots 1/4 cup diced tomato 1 tsp coriander 1/2 tsp turmeric A pinch of garam masala 1 pinch red chilli powder 2 cans of coconut milk 1 cup veggie broth Salt, and pepper to taste
Heat oil in a saucepan and saute onions, garlic, and ginger.
Add vegetables along with powdered spices.
When the vegetables are half done, add garam masala.
After a minute, add vegetable broth or water and coconut milk.
Let the ingredients simmer on a medium flame.
Finish the dish with salt, pepper, and fresh coriander leaves
