Chakli (or murukku) is an iconic spiral-shaped savoury snack that is indispensable during Diwali celebrations. Traditionally deep-fried in large quantities, this modern air fryer version delivers all the addictive crunch, carom seed warmth, and savoury satisfaction with only a fraction of the oil. Easy to shape and effortlessly crisp, this air fryer chakli lets you enjoy traditional festive snacking without the heavy greasiness.

Ingredients

1.5 cups rice flour 1/2 cup roasted gram dal flour (dalia flour / fried gram flour) 2 tablespoons melted butter or warm oil 1 teaspoon sesame seeds (til) 1/2 teaspoon carom seeds (ajwain) 1/2 teaspoon turmeric powder 1 teaspoon Kashmiri red chilli powder Salt to taste 3/4 cup warm water (approximate) Oil or butter spray for air frying

Step 1

Combine the rice flour, roasted gram flour, sesame seeds, carom seeds, turmeric, red chilli powder, and salt in a large mixing bowl.

Step 2

Add the melted butter and rub it into the flour mixture with your fingertips, then gradually pour in warm water to knead a soft, pliable dough that is not sticky.

Step 3

Load the dough into a chakli press (murukku maker) fitted with a star-shaped disc, and pipe neat spiral circles onto parchment paper or a clean board.

Step 4

Preheat your air fryer to 170C, carefully transfer the piped chaklis into the basket, spray them generously with oil, and air-fry for ten to twelve minutes, flipping halfway through until golden, crisp, and completely dry.
