The best part about the South Indian vada is its versatility. From urad dal to sabudana, you can make vadas, depending on your preference. And the easiest way to make them healthier is air frying the vadas.
1 cup sabudana 2 boiled potatoes 1/2 cup roasted peanuts 2-3 green chillies 1 inch of ginger 1 tablespoon lemon juice 1/4 cup chopped coriander leaves 1 teaspoon cumin seeds Salt to taste Oil for frying
Rinse and soak sabudana till soft. Drain excess water.
Mix sabudana with potatoes, peanuts, chillies, ginger, lemon juice, cumin, coriander, and salt.
Take small portions of the mixture and shape them into patties.
Heat some oil and shallow or deep fry until the vadas are crispy. Serve hot.
