This aglio olio recipe lets garlic gently infuse olive oil, creating a warm, nutty base with light chilli heat. Loved across southern Italy, it’s a classic midnight meal made when something quick and comforting is needed.
200g spaghetti 6-7 thinly sliced garlic cloves 4 tbsp olive oil 1 tsp chilli flakes 1 tbsp chopped parsley Salt and pepper
Cook spaghetti in salted water until al dente; reserve some pasta water.
Heat olive oil on low and slow-fry garlic till lightly golden.
Add chilli flakes, pepper, and splash in pasta water to emulsify.
Toss in the cooked spaghetti until fully coated.
Finish with parsley and adjust seasoning.
