Soft malpuas are a festive favourite during the occasion of Mahashivratri fasting. This vrat-friendly version is prepared by using the kuttu and vrat ingredients, making it perfect to offer as prasad or also as a bhog.
1 cup kuttu ka atta (buckwheat flour) 2 tbsp singhare ka atta (water chestnut flour) 1 cup full-fat milk 2 tbsp grated khoya (optional but recommended) 3 tbsp powdered sugar or crushed mishri ½ tsp crushed cardamom powder 2 tbsp chopped nuts (almonds, pistachios) Ghee for shallow frying ½ cup water (for sugar syrup) 3 tbsp sugar (for light syrup) Few saffron strands (optional)
In a bowl, add kuttu flour, singhare flour, milk, and sugar. Mix everything slowly to make a smooth, lump-free batter with a pourable consistency.
Add some grated khoya, cardamom powder, and chopped nuts to this batter. Stir it gently to enhance the flavour.
Keep the batter resting for about 10 to 15 minutes. This will help the flours sit properly, resulting in softer malpuas.
Make a light syrup by slowly heating sugar and water together. Add the saffron and boil it for a short time until it thickens slightly, but not as thick as regular chashni.
In a flat pan, heat the ghee. Pour a small ladle of batter and cook it on medium heat.
Flip and cook until it turns golden on both sides. Strain it from ghee, dip lightly in warm syrup for a few seconds, then serve.
