Chilli oil is widely used across Asian cuisines, particularly in China, where hot oil is poured over spices to release aroma and colour. A well-made version balances heat with fragrance, allowing it to enhance dishes rather than overpower them.
½ cup neutral oil 2 tablespoons chilli flakes 2 cloves garlic, finely chopped 1 teaspoon sesame seeds 1 small cinnamon stick 1 star anise optional Salt
Place chilli flakes, garlic, sesame seeds, salt and whole spices in a heatproof bowl.
Heat oil until hot but not smoking.
Carefully pour the hot oil over the mixture to bloom the spices.
Let it cool completely so flavours deepen and settle.
Store in an airtight jar and use as needed.
