Cucumber koshimbir is a traditional salad from Maharashtra, often served alongside everyday meals for balance. With its fresh ingredients and light seasoning, it works as a cooling side that complements heavier dishes, especially during warmer months.
1 cucumber, finely chopped 2 tablespoons grated coconut 1 tablespoon roasted peanuts, crushed 1 tablespoon yoghurt optional 1 green chilli, finely chopped Salt Chopped coriander Lemon juice
Combine cucumber, coconut, peanuts, chilli and coriander in a bowl.
Add yoghurt if using for a slightly creamy texture.
Season with salt and lemon juice, mixing gently.
Chill briefly before serving for a refreshing finish.
