Adai dosa features a mix of lentils and rice, and is known for having high amounts of protein. To make the South Indian staple, here’s a 6-step recipe that you can easily recreate at any time of the day.
½ cup rice ¼ cup chana dal ¼ cup urad dal ¼ cup toor dal ⅓ cup finely chopped onions ¼ cup chopped coriander leaves 2 teaspoons curry leaves 2 dried red chillies A pinch of hing Salt to taste Ghee for greasing
Rinse and soak the lentils and rice together for about 3-4 hours.
Grind the soaked lentils and rice with dried red chillies, salt, and hing. Let it ferment for 2-3 hours.
Add chopped onions, coriander leaves, curry leaves, and a little water to the batter.
Heat a pan, grease it with ghee, pour a spoonful of batter, spread it in a circle and cook.
Once the bottom is golden brown, flip the dosa to cook the other side.
Serve hot with nariyal chutney and sambar.
