This colourful noodle stir-fry has a gentle curry flavour and comes together quickly. It is bright, flavourful and perfect for a fast lunch or weekday dinner.
200 g rice noodles 1 onion (sliced) ½ cup mixed vegetables (capsicum, carrots, spring onions) 1 tsp curry powder Soy sauce and oil
Soak the rice noodles in hot water until they soften, then drain.
Stir-fry the onions and mixed vegetables in a hot pan.
Add curry powder, soy sauce and the softened noodles.
Toss everything well until the noodles absorb the flavours and serve hot.
