Everyone loves candies because they are sugary treats to pop once in a while. Watermelon candies taste just as delish and are quite easy to prepare.
6 cups of watermelon rind, cut into 2-inch strips 6 cups of water 1 ½ tsbp salt 3 cups sugar 3 cups of water 1 lemon, sliced
In a large mixing basin or container, combine all ingredients. Allow the rinds to soak in the refrigerator overnight, covered with plastic wrap or a lid.
Drain and rinse the rind. Put the rind in a pot and cover it with cold water. Bring to a boil, then decrease the heat and simmer for an hour.
Drain again and set aside. In a saucepan, heat the water and sugar until they boil.
Stir until the sugar is dissolved, then add the watermelon rinds and lemon slices.
Simmer for 20 minutes, stirring periodically. Drain again, then place the rinds on a baking sheet coated with paper or a silicone mat.
Allow to dry for approximately 36-48 hours, rotating halfway through. Enjoy!
