An authentic Thai basil chicken preparation has a savoury depth, a sharp chilli hit and a herb-forward basil finish which makes the dish vibrant with flavour. It is easy to make because the cooking relies on minimal prep and straightforward stir-fry sequencing, making it ideal to pair with steamed rice or eaten wrapped in lettuce leaves.
300 g boneless chicken, cubed 1 cup chopped onions 1 cup chopped bell peppers 1 tbsp minced garlic 1–2 chopped green chillies 1 tbsp soy sauce 1 tbsp oyster sauce 1 tsp sugar 1 cup fresh basil leaves 2 tbsp oil Salt, to taste
Add oil to a pan followed by the garlic and chillies to cook until fragrant.
Tip in the chicken to cook until the pieces brown slightly and cook partially.
Add the bell peppers and onions to sauté until softened.
Add the soy and oyster sauce along with sugar, and stir to coat everything evenly.
Stir in roughly torn fresh basil leaves and let them wilt before serving hot.
