Don't know what to do with overripe bananas? Turn them into a soft eggless banana cake that you can pair with your evening tea. This is an easy recipe that needs simple ingredients and gives you a decadent, flavourful cake every time.

Ingredients

2 ripe bananas (mashed) 1 cup all-purpose flour (maida) ½ cup sugar (powdered) ½ cup milk ¼ cup oil or melted butter 1 tsp baking powder ½ tsp baking soda 1 tsp vanilla essence A pinch of salt 2 tbsp chopped nuts (optional)

Step 1

Peel and mash the ripe bananas in a bowl until you get a smooth texture.

Step 2

To the mashed bananas, add sugar, milk, oil or some melted butter, and vanilla essence and mix everything well until the mixture appears to be smooth and a bit creamy.

Step 3

In a separate bowl, sift all-purpose flour, baking powder, baking soda, and salt together.

Step 4

Slowly add these dry ingredients to the wet mixture and mix gently to make a smooth, thick and lump-free batter.

Step 5

Pour this batter into a greased cake tin and then sprinkle some chopped nuts on top, as per your liking. Bake in a preheated oven at 180°C for at least 30 to 35 minutes.

Step 6

Once baked, take the cake out of the oven and let it cool down completely, then slice and serve.
