Ingredients

3 large eggs 2 tbsp milk or water ¼ cup onion, finely chopped ¼ cup bell peppers, chopped ¼ cup tomatoes, deseeded and chopped 1 tbsp oil or butter Salt and black pepper to taste

Step 1

Whisk eggs with milk, salt, and pepper.

Step 2

Heat oil or butter and sauté onions until soft.

Step 3

Add peppers and tomatoes and cook briefly.

Step 4

Pour eggs over vegetables and lower heat.

Step 5

Cook until just set, fold gently, and serve hot.
