Summers and mangoes are like best friends. So, making a mango malai kulfi to beat the heat sounds just perfect, right? Here’s a simple recipe!
1 litre full-fat milk 1 large Alphonso mango ¼ cup sugar 1 tbsp custard powder Basil seeds, as needed 1 cup mango puree Chopped nuts, assorted
Boil the full-fat milk and reduce it to around 40%. Keep stirring the milk at regular intervals.
Scrape the malai off the edges of the pan as the milk boils, then return it to the milk.
While the milk is heating, peel the mangos and scoop out the pulp into a dish. Add mango puree to a heated pan.
Bring it to a boil. Turn off the heat and allow the puree to cool fully. The puree will thicken.
Add the sugar into the reduced milk and stir thoroughly. Take a small amount of milk from the pan and transfer it to a bowl with custard powder.
Mix well. Add the mixture to the pan of boiling milk. Fast boil for about 30 seconds before turning off the heat. Cool the milk thoroughly.
Combine the prepared and cooled mango puree with the cold prepared milk. Whisk them well. Pour the mixture into the kulfi moulds.
Place the moulds in the freezer and chill until the kulfi hardens. Enjoy!
