The blues and chills of winter call for everything warm, cosy and soothing. On such days, a cup of gur ki chai is a great pick-me-up drink. This beverage has a deep, earthy flavour disseminated by the jaggery and a blend of clove, cinnamon, ginger, and other spices.
500ml of fresh milk 7 or 8 spoons of jaggery 12 medium pieces of ginger, grated 2 cinnamon sticks 2 cloves 2 teaspoons of tea powder 12 cups of water
The ginger must first be crushed and placed aside.
Next, crush the cinnamon and cloves too and keep aside.
Add fresh milk to the pan, bring to a boil. Remove from the heat and let it cool.
Add ginger, cinnamon, cloves, and jaggery to a pan with boiling water.
To the boiling water, add the tea powder. Add milk, simmer for 3 to 4 minutes.
Transfer the tea into a cup or kulhad through a sieve or a channi. Serve gur ki chai to everyone, hot and steaming.
