Coconut curry ramen is a modern fusion dish that brings together elements of Japanese ramen and Southeast Asian curries. Coconut milk forms the base of the broth, adding richness, while spices and aromatics build depth. The dish is flexible and can be adapted with vegetables, tofu or meat, depending on preference.
1 pack ramen noodles 1 cup coconut milk 1½ cups vegetable or chicken stock 1 tablespoon curry paste or powder 1 teaspoon garlic 1 teaspoon ginger 1 tablespoon oil Vegetables or protein of choice Soy sauce Salt
Heat oil and sauté garlic and ginger until fragrant.
Add curry paste and cook briefly to release its flavours.
Pour in coconut milk and stock, then simmer to develop a rich broth.
Add vegetables or protein and cook until tender.
Cook noodles separately and add them to the broth just before serving, adjusting seasoning as needed.
