When it comes to South Indian comfort meals, dosas have a soft corner in many people’s hearts. Neer dosas are also very easy to make; they’re healthy as well, hence the popularity.
1 cup raw rice, preferably sona masuri or any short-grain rice Water, for soaking and grinding Salt to taste Oil or ghee for cooking
Wash rice thoroughly. Soak for 4 to 6 hours. Drain the water completely. Add to a blender with water.
Blend it into a smooth and thin batter. Once the batter is smooth, add salt to taste and give it a final mix.
Heat a non-stick or cast-iron dosa pan on medium heat. You can also use a regular non-stick pan if you don't have a dosa pan.
Take a ladleful of the batter and pour it in the centre of the pan. Spread the batter gently in a circular motion to form a thin dosa.
Drizzle a few drops of oil or ghee around the dosa and cook it on medium heat until the edges start to lift and the dosa turns slightly golden.
No need to flip it to cook the other side. Fold it gently into a semi-circle or roll it like a cylinder.
Serve neer dosa with coconut chutney or any side dish of your choice.
