Soft scrambled eggs are a luxurious breakfast treat, with a creamy, velvety texture that melts in your mouth. Their delicate curds are light and fluffy, offering a rich, comforting flavour. Perfectly cooked, they pair wonderfully with toast or fresh herbs for added freshness. Here are some tips to keep them soft and moist.
Fresh eggs yield the best texture. They create a creamier, fluffier scramble compared to older eggs, which may result in a drier consistency.
Whisk the eggs thoroughly before cooking. The more air you incorporate into the eggs, the fluffier and softer the scramble will be. Whisk until the yolks and whites are fully combined, and the mixture is slightly frothy.
For extra creaminess, add a small amount of milk, cream, or even sour cream to the eggs. About 1 tablespoon of liquid per egg will give the scramble a rich, velvety texture.
Cooking scrambled eggs on low heat ensures they cook slowly and evenly, preventing them from becoming rubbery. Stir gently to allow the eggs to set into soft curds.
A non-stick pan allows the eggs to cook evenly without sticking or burning, which can ruin their texture. Use a silicone spatula to gently move the eggs around the pan.
