French yoghurt stands out for its richness, purity of ingredients, and method of production. This process, known as "post-set," creates each dish in its own container rather than mixing the ingredients and culturing them.
4 ¾ cups of whole milk ¾ spoon vanilla extract 1 cup of granulated sugar 1 tbsp of existing yoghurt 1-3 mason jars of preferred size ½ lemon zest 1 tbsp of honey 1 pinch of nutmeg Finely chopped strawberries Finely chopped blueberries Finely chopped peaches A whisk
Transfer the whole milk into a pot and bring it to a gentle simmer, not a boil. Stir from time to time.
Remove the milk from the heat and let it cool until it reaches a comfortable temperature of 40 to 45 degrees Celsius.
Add the sugar, honey, lemon zest, vanilla essence, and a pinch of nutmeg and whisk until completely dissolved.
Add a few spoons of the heated milk to the yoghurt in a small bowl. Gently whisk this back into the pot.
Fill sterile mason jars with the mixture. Loosely close the lids. Wrap a cloth or lay them in an oven with a light on for 6-8 hours.
Let it set. Refrigerate for 2 hours. Add strawberries, blueberries and peaches. Serve.
