This Christmas chocolate fudge is dense, rich and designed to feel indulgent while getting its protein from nuts and nut butter rather than powders alone. The texture stays soft and fudgy, and the flavour remains deep and chocolate-forward. It works well as a festive sweet, a post-meal bite or something to portion out through the holidays. Once set, it slices neatly and stores well when chilled.

Ingredients

200 g dark chocolate (70% cocoa), finely chopped ½ cup natural peanut butter or almond butter ¼ cup mixed nuts (almonds, walnuts or cashews), finely chopped 2 tbsp honey or thick date paste ¼ tsp sea salt

Step 1

Melt the dark chocolate gently using a double boiler or microwave in short bursts, stirring until smooth.

Step 2

Stir in the nut butter, honey or date paste and salt until the mixture becomes glossy and well combined.

Step 3

Fold in the chopped nuts, then pour the mixture into a lined tray and spread evenly.

Step 4

Refrigerate for 2–3 hours until firm, then cut into small squares.
