Phirni is one of the most loved desserts during Eid, loved for its creamy consistency and light aroma. Prepared with ground rice, milk, and some cardamom, this dessert has a rich flavour and feels festive in every bite.
1 litre of full-fat milk 3 tbsp basmati rice (soaked 30 minutes) 4 tbsp sugar ¼ tsp cardamom powder 8–10 saffron strands 10–12 pistachios, chopped 10–12 almonds, chopped 1 tbsp rose water
In a bowl, soak basmati rice for about 30 minutes. Drain, then grind with little water to make a lightly coarse paste. This will give phirni that classic texture.
In a heavy pan, boil 1 litre of full-fat milk, and stir occasionally so that it doesn't stick to the bottom.
Slowly add the ground rice paste to the hot milk. Cook over low heat and stir continuously for about 8 to 10 minutes, until you see the mixture turning thick and creamy.
Add sugar, cardamom powder, and 8 to 10 saffron strands. Stir everything well and cook for another 3 to 4 minutes until aromatic.
Mix in the chopped pistachios, almonds, and 1 tbsp rose water. Mix everything gently so that the nuts get distributed evenly.
Pour the phirni into small bowls and keep in the refrigerator for 1–2 hours. Garnish with extra nuts and saffron, and serve chilled.
