Apart from wheat and all-purpose flour, no other flour yields soft roti. If you believe that, you are probably not kneading the dough right. This Navratri is about practising the art of making rajgira roti. Here is a simple guide you need.
¾ cup rajgira atta 2 boiled potatoes Ghee as needed ½ tsp cumin powder Rock salt as needed 1 chopped green chilli
Blend the rajgira atta with boiled potatoes.
Add a dollop of ghee, cumin powder, chopped green chilli, and rock salt.
Add some water to knead the dough.
After 10 minutes of rest, make small dough balls and roll them into thin discs.
Use a hot griddle to cook roti and finish it with ghee. They will be soft.
