Are you hosting Onasadhya this year? Don’t forget to add payasam to the spread. It completes the traditional setup and also balances sour, bitter, and salty notes. This is an easy recipe that you can replicate in your kitchen.
½ tsp green cardamom ¾ cup sevaiyaan ½ cup sugar 2 tbsp ghee 4 cups milk 8-10 sweet raisins 10-12 cashews
Heat milk in a heavy-bottom saucepan over medium heat.
Add sugar to it and stir until it dissolves.
In another pan, saute cashews in melted ghee. Add raisins in the end.
Fold in sevaiyaan in milk and let them cook for 5-7 minutes.
When sevaiyaan swell, add cardamom powder, raisins, and cashews.
Turn off the flame, let the payasam cool off, refrigerate it, and serve.
