Mushroom fry in a Goan style is a lip-smacking delight to pair with paratha, enjoy it standalone, or add it between the slices of bread. It is not just wholesome but local spices make it a mandatory show-up on a lavish spread. Take a look at how to make it at home.
¼ tsp turmeric 250 grams button mushroom A pinch of garam masala 1 cup thinly sliced onion Salt to taste ½ tsp red chilli powder 2 tbsp oil ¼ tsp pepper ½ tsp cumin powder 2-3 green chillies 2 tbsp coriander
Rinse mushrooms thoroughly and trim their stems. You can use the scrap for the broth.
Heat a wok and saute onions until they are golden.
Add green chillies and roast them for 30 seconds before adding chopped mushrooms.
Sprinkle all the powdered spices and cook the ingredients until the mushrooms leave water.
Let the excess water evaporate and saute until the mushrooms are golden brown.
Turn off the heat and serve mushroom fry with parotta, roti, and other flatbreads.
