Ingredients

8 gms of active dried yeast 130 gms of buckwheat flour 20 gms of caster sugar 100 gms of potato starch 390 gms of water 90 gms of brown rice flour 20 gms of psyllium husk 12 gms of apple cider vinegar 10 gms of table salt

Step 1

Activate the dried yeast with sugar and warm water. Let it rest for 10 minutes.

Step 2

Mix potato starch, buckwheat flour, brown rice flour, yeast mixture, psyllium gel, and apple cider vinegar in a bowl.

Step 3

Knead the ingredients into a dough. Grease your palm with oil towards the end to achieve a smooth dough.

Step 4

Keep the dough in a warm place to inflate it. After an hour, knead it again, and let it inflate for one hour.

Step 5

Preheat the oven to 250°C for 30-40 minutes. Add the dough to the griddle and bake it at 220°C for 40-50 minutes.

Step 6
