Rogan josh is one of the oldest mutton dishes, which has its origin in Persia. The Mughals of Kashmir first introduced this dish, influenced by Persian cuisine. Here are a few tips to keep in mind for home cooks.
The root of a herb known as rattan jot is added to the authentic recipe, giving it its crimson hue.
To make rogan josh that cooks more quickly and is softer, use young, sensitive lamb parts. You might also try this with chicken.
Cloves, ginger, pepper, asafoetida, fennel, cinnamon, green cardamom, black cardamom, and cloves are among the spices that are used both whole and powdered.
Cooking the entire dish in ghee improves the quality of the spices and adds flavour.
Use thick natural yoghurt, which balances the flavour with a hint of tartness.
When needed, rogan josh can be reheated in the microwave or on the stove after being kept in an airtight container in the refrigerator.
