Beetroot is not just for salads; it can be turned into many tasty dishes. These easy recipes maintain their natural sweetness, vibrant colour, and flavour in ways that feel exciting.
Sauté some mustard seeds, curry leaves, onions, and grated beetroot in light oil. Cook it lightly to maintain the texture, and finish it with coconut and lemon juice for a delightful side dish.
Roast the chopped beetroot cubes with a little salt, cumin seeds, and olive oil until caramelised. Toss it with fresh yoghurt, mint and imli chutney, onions, and chaat masala from the top for a sweet-savoury snack.
Mix the grated beetroot into whole wheat dough with some ajwain, chilli, and salt. Roll and cook it with little ghee to make soft, colourful parathas ideal for breakfast.
Boil beetroot with some garlic, onion, and vegetable stock. Cool it down and blend to make a smooth paste, add pepper and a hint of cream for a comforting bowl.
In a pan, temper some cumin seeds, green chilli, and curry leaves in ghee. Add the grated beetroot and cooked rice to it and toss gently with basic spices for a satisfying meal
Blend boiled, grated beetroot with thick yoghurt, roasted cumin powder, and salt to taste. This cooling raita perfectly balances the earthy sweetness of beetroot with refreshing tang.
