Given the sheer variety of breads available these days, it is easy to convert a freshly baked loaf into a hearty breakfast that is enjoyable for children and adults. Add variety to staple breakfasts by including these tasty and quick recipes using a handful of ingredients.
Use a slice of sourdough or good quality brown bread as the base for mashed avocado seasoned with lime juice, red chilli flakes, salt and coriander; top up with a fried or boiled egg for extra protein.
A sweet breakfast is a delightful way to get children excited about the first meal of the day; add seasonal fruit and a drizzle of honey or maple syrup to make it extra delicious.
For those who have the time for a bit of chopping and sauteeing in the morning—the bread upma is an Indian-style medley of crisp, soft textures and quintessential Indian flavours.
Add sliced vegetables of choice, a layer of butter and chutney to make the perfect sandwich loaded with fibre or simply swap them for eggs and cheese, as a high-protein meal to begin the day.
Keep it simple and savoury with the addition of cheddar or processed cheese, some chopped chillies or bell peppers and a sprinkling of oregano—a perfect pairing to a cup of tea.
A great way to integrate an assortment of nutrients is to use some cooked chickpeas or hummus, chopped tomatoes or even sauteed mushrooms over toasted multigrain or baguette slices.
