No chaat is complete without a garnish of crunchy sev. If you’ve ever wondered how to make the super-thin and crispy namkeen, here’s your answer. Made with besan, follow this sev recipe at home.
1 cup besan ½ cup rice flour ¾ teaspoon red chilli powder ¾ teaspoon salt ¼ teaspoon turmeric powder 1/8 teaspoon asafoetida (hing) 1 tablespoon oil 2 tablespoons water Oil for frying
Mix besan, rice flour, red chilli powder, salt, turmeric powder, and hing.
Add hot cooking oil and knead a smooth dough.
Grease a sieve maker and choose the disc with the desired size of holes.
Heat some oil. Fill the sev maker with the dough and release thin strands into the hot oil.
Deep fry the sev till crispy. Drain excess oil and store it in an airtight container till you want to use it.
