Hung curd is a thick and creamy yoghurt made by draining out excess whey. It is made by placing regular curd in a cloth and hanging it, which drains the liquid through the cloth and leaves behind a denser and rich-textured curd. It is the secret ingredient that transforms dips, raitas, and even desserts into something extraordinary.
2 cups thick plain yoghurt Muslin or cheese cloth
Put the plain yoghurt into muslin or the cheese cloth.
Tie the cloth tightly with the yoghurt inside.
Hang the cloth and place a bowl underneath it to drain excess water overnight.
Let the water drip out, leaving thick-textured curd inside the cloth.
Transfer it into a bowl and use it as a spread or in dips.
