Everyone loves having a creamy bowl of pasta filled with assorted vegetables. To make it healthier and give it a pink hue, make beetroot pasta with this recipe. Garnish with cheese and herbs and serve.
450g pasta of your choice 2 beetroots 2 cloves of garlic 1/4 cup walnuts 1/4 cup Parmesan cheese 2 tablespoons olive oil 1/4 cup vegetable broth 1 tablespoon lemon juice Salt and pepper to taste Fresh herbs for garnish
Boil water with a little salt. Add pasta and cook till it’s soft.
Roast or boil beetroots as you prefer. Chop them into small pieces.
Blend chopped beetroots, garlic, olive oil, vegetable broth, lemon juice, salt, and pepper.
Add the beetroot mixture to the cooked pasta. Cook with toasted walnuts and season with salt.
Transfer the beetroot pasta to a plate and top with grated Parmesan cheese. Garnish with mixed herbs and serve.
