Ridge gourd, also known as turai or tori in India, is a light and nutritious vegetable which is great for digestion. It has a mild and slightly sweet flavour and soft texture when cooked, making it ideal for a variety of curries, dals, and stuffed preparations.
It is a simple North Indian Curry made by cooking ridge gourd with sautéed onions, turmeric and coriander for a simple curry.
Simmer ridge gourd in a coconut and lentil paste with mild Andhra spices.
Blend peanuts and coconut into a paste and cook with ridge gourd for a creamy curry.
Stir-fry ridge gourd with vepudu karam, grated coconut, and roasted peanuts for a crunchy side dish.
Saute the ridge gourd with coconut, green chillies, and mild spices for a no-onion, no-garlic curry.
