Summer is all about trying different recipes with the king of fruit - mango. To try something quick and healthy, try this easy recipe and make a mango salad that keeps you refreshed and full.
2 ripe mangoes 1/2 cucumber 1 red bell pepper 1/4 onion 1/2 cup chopped cilantro 1/4 cup chopped mint 2 tablespoons lime juice 1 tablespoon olive oil 1 tablespoon soy sauce 1 teaspoon grated ginger Salt and black pepper to taste
Combine diced mango, cucumber, bell pepper, onion, cilantro, and mint.
Mix freshly squeezed lemon juice, olive oil, soy sauce, grated ginger, salt, and pepper.
Pour the dressing over the salad and toss gently to coat.
Have a taste, adjust the spices per your preference and serve the summer salad.
