No matter how tired you are, if you want to stick to a healthy, home-cooked meal, anda bhurji always saves the day. Ready in just 5 minutes, you can pair anda bhurji with roti, pav, or toast.
2-3 eggs 1 onion 1 green chilli 1/2 inch ginger 1/2 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1/2 teaspoon garam masala 1 tablespoon oil Salt to taste Coriander leaves for garnish
Whisk the eggs. Chop onion, green chilli and ginger.
Heat some oil and saute onions. Add green chillies and ginger.
Mix haldi, red chilli powder, and garam masala. Stir till aromatic.
Pour the whisked eggs and stir. Cook till they are scrambled and cooked thoroughly.
Garnish with chopped coriander leaves and serve with toast or pav.
