Gluten-free desserts often get treated as substitutes rather than proper desserts, especially during festive meals. At Christmas, when the focus is on sharing and abundance, gluten-free options should feel just as deliberate and satisfying as everything else on the table. These desserts rely on ingredients like nuts, rice, fruit and dairy that naturally hold structure and flavour without flour.
Melt dark chocolate and butter, then fold in eggs and sugar. Bake until just set in the centre. Cool fully before slicing for clean edges.
Whisk eggs with sugar, then fold in ground almonds and orange zest. Bake until golden and firm. Let it rest before serving so the crumb settles.
Blend dates into a paste, mix with desiccated coconut and roll into small balls. Chill until firm. Store refrigerated until serving.
Simmer rice slowly in milk until thick. Sweeten lightly and finish with cardamom and nuts. Serve warm or chilled depending on preference.
Core apples and fill with chopped nuts and cinnamon. Bake until soft and slightly caramelised. Serve warm as-is or with cream.
