Christmas potluck dishes work best when they can be cooked ahead, transported without fuss, and served easily once laid out. These recipes are chosen for how well they hold their structure and flavour on a shared table, and for how naturally they fit into a Christmas dinner spread.
Season a whole chicken generously with salt, pepper, garlic and mixed herbs. Roast it on a bed of potatoes so the fat and seasoning carry through. Let the chicken rest fully before slicing so it stays moist when served. Transport with potatoes underneath to keep everything flavourful.
Sauté vegetables until just cooked and layer them with a loose béchamel and pasta sheets. Bake until set but not dry. Cool slightly before transporting so it cuts cleanly. Reheat gently at the venue if needed.
Cook pasta until just al dente, then toss it with a creamy mushroom sauce or basil pesto and a little cheese. Transfer to a baking dish and bake until lightly set on top. This travels well, stays cohesive, and can be served straight from the dish without plating.
Use firm fish fillets, season with salt, pepper, lemon zest and herbs, and bake wrapped in foil so they stay moist. Portion the fish before transport if possible. Open and garnish just before serving.
Layer soaked sponge or savoiardi biscuits with mascarpone cream and cherries for a cherry tiramisu, or prepare a traditional pudding in advance and steam until set. Both options improve with resting time, travel easily, and can be served in neat portions without last-minute work.
